You could easily do some batch freezing yourself one weekend, or Picard (available from Ocado) sell ready chopped and frozen veg, and so do Aldi and Morrisons. Yes it’s possibly more expensive if you buy it ready-done but it’s such a good fall-back sometimes.
Frozen veg retains all its nutrients if it’s stored well, so there are no worries there at all.
I always have the following in my freezer and some dried staples in the cupboard such as pasta, rice, couscous, bulgar wheat.
- Chopped onions
- Chopped shallots
- Sliced mixed peppers
- Chopped fresh tomatoes
- Chopped red chilli
- Chopped garlic
- Chopped ginger
- Chopped parsley
- Roast vegetables
Keep a block of Parmesan in the fridge, some tinned tomatoes, sea salt and black pepper and the world is your oyster!
