Salmon salad with avocado, sauté potato and chilli lime dressing

This is such a beautiful and flavourful salad packed with healthy fatty acids to boost your brain power and make you happy inside and out.

You need to have grilled salmon and new potatoes for dinner the night before making this!

  • 1 grilled salmon fillet, hot or chilled.
  • half an avocado, chopped into chunks
  • Large handful of salad leaves
  • 1 large new potato, pre-cooked and chilled; sliced into pound-coin-thick slices.
  • olive oil
  • fresh parsley
  • fresh chives
  • sriracha sauce
  • half a red chilli deseeded and finely chopped (I used frozen)
  • tablespoon of white balsamic vinegar
  • sea salt
  • half a fresh lime


Fry the potato slices in olive oil until golden on each side. Arrange the salmon on a bed of salad leaves and scatter over the chopped avocado.

Make the dressing by whisking together a tablespoon of olive oil with the white balsamic, pinch of sea salt, squeeze of sriracha and the chopped chilli.

Add the potatoes to the salad and drizzle with the dressing. Squeeze the lime over and finish with a scattering of fresh chopped parsley and some snipped chives.

Salmon (and its peer, sea trout) is very high in Vitamin B12, which is important for red blood cell production. A deficiency in B12 can result in a form of anaemia. B12 also helps to regulate production of a hormone called Homocysteine, an excess of which can lead to heart and blood vessel disease and stroke. Salmon is also a good source of Vitamin D, whose functions include bone health, blood sugar control and immunity.
