One pan chicken and chorizo

I was so busy but still I never like to waste a delicious eating opportunity. So I came up with this, put it together in less than ten mins, went back to my desk and served a beautiful dinner 40 mins later.

For the ravenous among you grab a piece of real bread ready to mop up the luscious juices.

Serve with a big salad or green vegetables.


  • 4 free range organic chicken breasts
  • 100g of nitrate-free chorizo, I used this
  • 1 red onion sliced into thin circles
  • 1 red pepper, deseeded and sliced into strips
  • 1 yellow pepper, deseeded and sliced into strips
  • 4 potatoes washed and sliced, pound-coin-thick
  • 3-4 large ripe tomatoes, halved
  • extra virgin olive oil
  • sea salt
  • black pepper
  • fresh herbs for serving

Heat the oven to 180 degrees

Pour a thin layer of olive oil into the base of an oven dish then layer the onions and peppers, sprinkle with a bit of sea salt.

Place the chicken breasts on top and scatter over the chorizo. Coat the potato slices in olive oil and tuck them all around the edge and some between the chicken. Or just layer them on top of the onions and peppers before adding the chicken. Also tuck in the tomato pieces all over.

Pour over some more olive oil – yes, I mean it! Sprinkle on more salt and some black pepper and cover with foil.

Bake for 40 mins and check the chicken is cooked through. For the last 10 mins you can take the foil off.
