Herby Sausage dauphinoise

Any variation on sausages and potatoes is a variation on heaven.

This a marriage of herby sausages, red onion and slices of creamy waxy potato cooked with butter, seasoning and a bit of whole milk or cream.

Oh and topped with a sprinkle of good cheddar.

Ingredients

  • 8-12 great sausages. That means ones with good flavour and seasoning, not low fat and made with 85%+ meat.
  • 2 red onions sliced into thin rings (use food processor)
  • 4 large waxy potatoes with clean skins, sliced into 3-5mm slices (food processor again)
  • 150g butter
  • 200ml cream or whole milk
  • teaspoon of English mustard (optional) Horseradish works too, about 1-2 tablespoons of horseradish sauce
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried sage
  • coarse ground black pepper
  • sea salt
  • grated strong cheddar for sprinkling on top

Instructions

First brown the sausages, I’m lazy and do this in the oven! Then butter the base of a 25in square ovenproof dish and add a layer of the sliced onion, then a layer of potato. Dot with butter, sprinkle some of the herbs, salt and pepper on then arrange the sausages all over the top. Add another layer of onions, potatoes, butter and seasoning.

Shake the cream or milk and the mustard or horseradish together then trickle it through any gaps.

Cook in a 180deg oven on the middle shelf for about 40-45 mins until the potatoes are cooked through and the onion is squidgy and a bit caramelised in places. After 25 mins add the grated cheese and put back into the oven so it melts and goes golden.

Potatoes

Potatoes are wrongly slated by nutrition fashionistas. They have plenty going for them, as well as being incredibly delicious!

Their biggest claim to fame is their vitamin B6, which is used throughout the body for cell formation, and that’s a pretty big task. B6 is also a key player in nerve and brain function, as well as gene expression. Spuds are also pretty rich in vitamin C, which isn’t only good for immunity but plays a strong part in forming and maintaining healthy connective tissue and skin.
