Heavenly chopped salad

Salad is so much more than your nan’s lettuce, tomato and cucumber, with salad cream (though I do love salad cream). You can throw any number of salad’y bits and vegetables in and if you chop them finely you get a bit of everything in each mouthful and it’s tasty-as, especially with a great dressing.

I always remember watching the women on Sex and the City eating salad; shoving great big lettuce leaves in all at once, and talking at the same time. Dear oh me, not polite! This is a much better-mannered salad, not to mention a million times tastier.

Just crumble some cool feta cheese over this and you have a beautiful meal right there.

Ingredients

  • any type of lettuce, or a mix of lettuces (not iceberg though)
  • 2-3 ripe tomatoes
  • half a large red onion
  • large’ish piece of cucumber
  • small tin of sweetcorn, or use frozen
  • 1 red pepper
  • any other salad items, fruit (apple works) or veg you care to add
  • bunch of fresh mint leaves
  • some fresh basil
  • olive oil
  • white balsamic vinegar
  • tablespoon of full fat mayo
  • half a teaspoon of mixed dried herbs
  • sea salt

Instructions

Chop everything very finely.

Make the dressing by shaking up a few good glugs of  olive oil with 2 tablespoons of the vinegar, the mayo and the dried herbs.

Mix the chopped salad and dressing and transfer to a nice bowl.

You can eat it as it is or serve with crumbled feta, nuggets of good strong cheddar or blue cheese.

There’re a lot of nutrients hanging out here but I want to focus on the fibre. Eating fibre provides the good guys that hang out in the gut with tasty food; this helps them thrive, and by doing so it has a knock on effect right through the system. A healthy happy gut helps a healthy happy brain.
