Greek yoghurt with caramelised orange

When oranges are in season at the end and beginning of each year they are heavenly, and this really brings out their citrussy beauty. Caramelised in a bit of butter and honey and served with Greek yoghurt, creme fraiche and a sprinkle of walnuts (not shown because I decided to add them after I’d taken the pic and started eating it!) they are a healthy and happy start to any winter’s day

  • 1 juicy orange peeled and sliced into discs
  • 100g full fat Greek yoghurt
  • 50g full fat creme fraiche
  • 3 tsps extra virgin olive oil
  • 1 tsp butter
  • 2 tsps of clear honey
  • A few chopped walnuts
  • A few small mint leaves
  • Drop of vanilla extract (optional)

Heat the oil, butter and honey in a frying pan (even a squeeze of juice from the orange) then add the orange slices and cook for 2-3 mins, flipping halfway through.

Mean time mix the yoghurt and creme fraiche (add a drop of vanilla extract if you want) and spoon it into a dish in oval/quenelle shapes. Now add the orange slices and nuts, scatter some fresh mint on and drizzle on the hot sauce before it sets.

At Nuush we LOVE jacket potatoes. That doesn't mean eat big jackets every night! But when you do, eat em good and proper, with real butter and sea salt.
I was so busy but still I never like to waste a delicious eating opportunity. So I came up with this, put it together in less than ten mins, went back to my desk and served a beautiful dinner 40 mins later. For the ravenous among you grab a piece of real bread ready to mop up the luscious juices. Serve with a big salad or green vegetables.
