Garlic butter chicken in breadcrumbs

Absolutely divine, melt-in-the-mouth, garlicky and crunchy-coated chicken.

Prep: 10 mins
Cook: 40 mins
Servings: 2

  • 2 free range organic high welfare chicken breasts
  • 4 large pats of garlic butter – can buy ready made or just mix 4 heaped teaspoons of butter with crushed garlic
  • 3 free range organic eggs, whisked and in a dish
  • 4 dessert spoons of panko breadcrumbs mixed with a large pinch of sea salt, in another dish

Heat the oven to 190 degrees.

Slit the chicken breasts lengthways on the flat leaving one side joined then put two pats of butter inside each, and close.
Coat the chicken in the beaten egg and then the breadcrumbs.

Line a baking tray with baking paper, place the chicken on it and place another deeper baking tray over the top as a lid.

Bake for 30-40 mins until you’re sure the chicken is cooked through. For the last 5-10 mins remove the second tray so the breadcrumbs go golden.

Nutrition Info

Chicken is one of the best sources of vitamin B3, otherwise known as niacin. Niacin is vitally important for energy production, changing protein, fat and carbohydrate into usable energy. In particular niacin helps convert starches, stored in the liver and muscles, into energy. It also plays an antioxidant role, helping to stop damaging free radicals from doing their nasty cell-destroying deeds.

Ask not what you can do for your country. Ask what’s for lunch.
