Eton Mess breakfast bowl

One of the nicest breakfast bowl recipes ever. It’s strawberry season in the UK as I write this, so the strawberries crush and give up their juices beautifully to combine with the creamy Greek yoghurt and creme fraiche. The creme fraiche just taking the edge off the yoghurt and making it a little more decadent but without going the whole hog of having double cream for breakfast!

You can always convert this to a pudding by using whipped cream instead.

  • 150g of full fat Greek yoghurt
  • heaped dessert spoon of full fat creme fraiche
  • 8 juicy strawberries, in-season, hulled and quartered lengthways
  • 2- mini meringues – they’re about the size of a macaroon. Or make your own meringue if you have heaps of time! I bought ready-made free range egg ones.

Nuush clients: Please apply the portion sizes stated in your account and divide the recipe so that you make only as much you need.

Roughly crush ⅔ of the strawberries with a fork, then crush the meringues lightly, keeping some lumps rather than shattering them to powder.
Now mix the yoghurt and creme fraiche before gently and carefully combining the crushed strawberries and meringue, you want it swirled rather than smoothie’d!

Serve topped with the remaining strawberries and any leftover pieces of meringue.

Nutrition Info

Berries are not only wonderful and versatile gems of sweetness, they also provide us with a myriad of nutrients, helping to maintain a well-rounded diet and good health. They’re packed to the brim with flavonoids for fighting inflammation and cell damage. They’re also a great source of fibre, but only when eaten as the whole fruit; juicing fruit breaks the fibre down before your body has the joy of doing so. Fibre gives your good gut microbes their favourite food and helps them to proliferate and spread their magic right through your system all the way from brain to toes. They also provide vitamin C for healthy skin and connective tissue as well as immunity.

Good honest nutrition

I love you berry much.
