Cauliflower cheese slices

Cauliflower cheese slices. I did them in the air fryer and they were like heaven with cheese on.

Made with tender cauliflower florets roasted with a cheesy topping, this dish is perfect. With just a few simple ingredients and minimal prep time, you can have a hearty and satisfying meal in no time. Follow this step-by-step guide to learn how to make cauliflower cheese with a difference!

You hear about beige food being bad but cauli has a heck of a lot going for it. It’s rich in a phytonutrient called sulforaphane. Sulforaphane is a compound found in a variety of cruciferous veg, like broccoli, cauliflower, and kale. It supports your immune system and one mind-blowing thing it helps with is apoptosis. That’s a ‘thing’ that literally pops off rogue, damaged, unnecessary or otherwise shonky cells. Good old cauli.

Ingredients

  • half a large cauli, sliced vertically into thick slices.
  • 4 tablespoons of extra virgin olive oil
  • half a teaspoon of garlic salt
  • heaped teaspoon of paprika
  • teaspoon of dijon mustard
  • course ground black pepper
  • grated extra mature cheddar in your preferred amount, about two handfuls is good

Instructions

Mix the olive oil with the paprika, garlic salt and mustard, then coat the cauliflower slices with it. Line the air fryer with baking paper and lay the cauli inside, pouring over any remaining olive oil mix.

Air fry on 200º for 12 mins, then check to see it’s cooked through, if not cook it a bit more. Now cover them in a good thick layer of grated cheese and air fry again for 3 mins, or pop under the grill.

Scatter on a few fresh herbs and course-ground black pepper.

They’d also be beautiful with some toasted breadcrumbs.

Cauliflower

Because cauliflower is white people assume it’s devoid of nutrients. Very much not the case! Cauli is a ‘cruciferous’ vegetable, like broccoli and studies are showing that it enhances the function of the cardiovascular, digestive, immune, inflammatory, and detoxification systems. It also has a significant amount of vitamin C – who knew?! And another shocking fact, cauliflower contains some protein, with small amounts of amino acids (in fact most foods do; protein deficiency in the western world is rare as hen’s teeth).
