Caprese salad

Four top quality ingredients are all that’s needed to make this salad.

Buy the best buffalo mozzarella you can afford, really lush ripe tomatoes, good peppery extra virgin olive oil and fresh green large basil leaves.

  • 1 ball of buffalo mozzarella (Garofalo from Waitrose is excellent), or a small pack of mozzarella balls – about 125g
  • 2 large ripe juicy tomatoes
  • handful of fresh basil
  • 1-2 tbsps of extra virgin olive oil
  • 1-2 tablespoons of white or dark balsamic
  • teaspoon of green pesto (optional)
  • salt and black pepper

Thickly slice or tear the mozzarella (or use the mozz balls) and arrange on a plate with thickly sliced tomatoes and the basil.

Drizzle the olive oil and balsamic over then season well.
