I’m not usually one for making things flourless that are nice made with flour, if you know what I mean! But these berry banana pancakes are quite gorgeous in spite of being totally flour-free! Really good if you’re trying to manage your carb intake, you can have these for breakfast or brunch then have your delicious sandwich for lunch or potatoes for dinner.
I don’t want to encourage a carb-free diet as that would just be faddy!
Anyway, back to these beautiful golden circles of butter-cooked banana’y batter slathered in maple syrup, almost impossible to dislike.

Mash the banana with a fork, making sure no lumps are left, then crack the egg in, and the baking powder, and combine. I used a small hand whisk, without actually whisking, if you know what I mean! You can add a pinch of cinnamon here if you like it.
Heat the grill.
Heat the butter in a large heavy oven-proof pan then spoon in 4-6 circles of the batter. Cook gently for a few minutes and then transfer to the grill to cook the top enough so you can flip the pancakes without disaster (thank you to our client Heather Rogers for discovering this technique!).
Remove pan from the grill then flip the pancakes with an egg-slice, they should be golden underneath. Cook for another couple of minutes.
Serve with warm berries or any fruit, I heated berries with honey, you could do the same with peach, plums or banana or simply serve with fruit-as-it-comes. Drizzle with maple syrup and serve with a couple of spoons of Greek yoghurt. I love Tim’s Dairy Greek-style yoghurt, plus they are very nice people over at that dairy!
Bananas are high in vitamin B6 which helps you to produce neurotransmitters for good brain and nervous system health and regulation of mood.
Eggs are little packages of nutrition. They provide vitamin A, vitamin D, all the B vitamins, folic acid, and are a rich source of selenium (for thyroid function) and iodine as well as many other minerals. They are an excellent source of choline which helps our cells and nerves to signal, as well as with healthy construction of the cell walls.
Fruit provides a raft of vitamins and minerals, such as A and C for healthy eyesight, skin and connective tissue, as well as fibre for happy insides!
