
Like a spicy creamy prawn cocktail on a fluffy hot potato.
Well, that’s exactly what it is!
Bake the potatoes until cooked through and crispy on the outside, it’ll take about an hour or you can start them off in the microwave for 10 mins to reduce oven time.
10 mins before they’re done heat some olive oil in a frying pan and fry the peppers and prawns til the prawns are cooked through, add most of the paprika and all the chilli, mayo and ketchup, season to taste.
When the potatoes are done split them in half and pile the prawn filling on top, then sprinkle on a little bit more paprika and some chopped fresh parsley. Serve with half a lemon for squeezing.
Prawns are rich in selenium which, with iodine, plays a significant role in healthy thyroid function. They also have a good amount of vitamin B12 to help production of red blood cells.
