Baked potato with paprika prawns and peppers

Like a spicy creamy prawn cocktail on a fluffy hot potato.

Well, that’s exactly what it is!


  • 2 baking potatoes
  • olive oil
  • 1 large red pepper deseeded and finely sliced into strips
  • 2 large handfuls of frozen prawns
  • heaped teaspoon of smoked paprika
  • teaspoon of dried chilli flakes or 1 fresh red chilli finely chopped
  • sea salt
  • 2 tablespoons of full fat mayo
  • 2 tablespoons of ketchup
  • a fresh lemon
  • fresh parsley to garnish

Bake the potatoes until cooked through and crispy on the outside, it’ll take about an hour or you can start them off in the microwave for 10 mins to reduce oven time.

10 mins before they’re done heat some olive oil in a frying pan and fry the peppers and prawns til the prawns are cooked through, add most of the paprika and all the chilli, mayo and ketchup, season to taste.

When the potatoes are done split them in half and pile the prawn filling on top, then sprinkle on a little bit more paprika and some chopped fresh parsley. Serve with half a lemon for squeezing.
