Amazing basil, cheese and walnut salad

The word salad sounds so boring doesn’t it? But salad is just a base for other gorgeous accompaniments.

This one has so much flavour and the walnuts give a lovely crunch.

The first time I made it I had to remake it and eat another one just to be sure!

Ingredients

  • half teacup of sweetcorn and half of edamame beans or peas. I used frozen, microwaved. Birds Eye do frozen soya beans which are tre same thing.
  • large handful of fresh large basil
  • sliced ripe tomatoes
  • cucumber – cut on the diagonal in thick chunks then sliced into thick strips (this is SO important…)
  • 40g of grated extra mature cheddar. Press it lightly into clumps. It makes it nicer than blocks of cheese.
  • 1-2 tbsps of olive oil
  • handful of walnut halves
  • white balsamic vinegar
  • sea salt and black pepper

Instructions

Assemble all the ingredients nicely in a shallow bowl, as shown.

Cheese
